燒臘店的燒肉用精鹽醃製，最外層的肉常會變得「死鹹」，以「鹽麴」取代精鹽，鹹味溫和層次豐富。正宗的脆皮燒肉工序繁複，在家製作工序可簡化一點，五花腩放進冰箱吸乾豬皮的水份，插刺多而密，也可以做出有水準的脆皮燒肉，燒肉沾芥末醬，完美的配搭，回味無窮。
